Fish as a functional food: some issues and outcomes

چکیده

Introduction Seafoods are inherently functional and possess many components that are good for human health. Seafoods and their by-products are an excellent source of nutraceuticals and bioactives, and these can be extracted/isolated and added to a range of foods thereby enhancing functionality of the foods in terms of human health (Shahidi, 2003; Alasalvar and Taylor, 2002). These aspects are addressed under nine headings: (1) inherent functionality; (2) nutrient intake of different populations from fish; (3) health benefits of fish products; (4) improving functional profiles of fish and fish products; (5) upgrading fish waste; (6) safety implications of functional seafoods; (7) ethical and sustainability issues; (8) health claims; (9) promoting fish and fish products to consumers. Most of the coverage given is brief; comprehensive coverage would require a book rather than this 33 page article.

Ciliate species Epistylis sp. cause to fish deaths

A group of unicellular ciliates such Epistylis are amplified at aquatic environment by governor of food contamination. In the case, fixed ciliates like Epistylis are colonized as Ectoparasites on fishes, Aquatic crustaceans, Turtle and Aquatic plants. They graze food residue or bacteria or decompose residue like Ectoparasites. In this case, Epistylis licking their stems to the surface body of f...

Functional properties of fish protein hydrolysates from Cuttlefish (Sepia pharaonis) muscle produced by two commercial enzymes

Fish protein hydrolysates were prepared from Cuttlefish (Sepia pharaonis) muscle using alcalase and protamex methods. By conducting the Cuttlefish protein hydrolysate using alcalase (CPHA), it showed higher degrees of hydrolysis, proximate composition, yield, emulsifying activity index (EAI), emulsion stability index (ESI), foaming activity index (FAI), solubility, water holding capacity (WHC) ...

Combined effect of sodium polyphosphate and smoking on quality parameters of fish (Capoeta umbla) sausage

Improving food quality is one the major issues for the food processing industry. Since food produced from fish spoils quickly, it obviously cannot be kept for an extended time. The aim of the present study was to determine the effects of sodium polyphosphate and smoking on the shelf life of fish sausage that was produced from Capoeta umbla and stored at 4±1°C. Therefore, we designed four groups...
